Low-Carb Chocolate Peppermint Rice Krispy Treats


  • 4 tbsp. (½ stick) unsalted butter

  • 1/4 tsp. salt

  • 1 10 oz. bag mini marshmallows

  • 1/2 to 1 tsp. peppermint extract

  • 6 c. low carb chocolate cereal like Magic Spoon

  • Optional add ins: mint M&Ms, crushed peppermints


  1. Line a 9x9-inch square baking pan with parchment paper.

  2. In a large non-stick saucepan, melt butter over medium heat. Once melted, add in salt, and marshmallows. Reduce heat to low and stir until completely melted.

  3. Remove from heat and stir in the peppermint extract. Start with 1/2 tsp and then add more as needed until you get the desired mint flavor. Pour over the cereal (and any optional add ins) and mix until completely coated.

  4. Pour into the prepared pan. Lightly butter the bottom of a measuring cup and gently press cereal into a smooth, even layer.
