What's a girl to do on a rainy NOLA day...? Bake of course!! I have been craving something sweet for quite some time now and have fought the cravings until today when I was cooped up inside with this dreary weather. I had been wanting to make a cookie similar to a peanut butter cookie and while this isn't quite the same consistency the flavors are there because of the almond butter.

Chocolate Chip Almond Butter Cookies
1 large egg
1 cup almond butter, room temperature
1/2 cup coconut palm sugar
1 teaspoon baking soda
3/4 cup chocolate chips, (I use Enjoy Life!)
Preheat oven to 350 degrees
In a medium bowl whisk the egg until well beaten.
Mix in the almond butter until well combined.
Add the coconut sugar and baking soda. Mix well.
Fold in the chocolate chips.
Roll about 1 teaspoon of dough into a ball. Press flat between your hands.
Place cookie rounds on parchment paper lined baking sheet, approximately 1/2 inch apart
Bake for 9-11 minutes.
Allow to cool on baking sheet before removing to a wire rack to cool completely.
